Doris Jacobs

Doris Jacobs is science leader metabolomics at Unilever R&D, Vlaardingen, the Netherlands, and applies nutritional metabolomics in the field of diet & weight management, cardiovascular health and gut & immune health.
She graduated from the University of Aachen, Germany, with a Ph.D. in physical chemistry. During her post-doctoral research at the Pacific Northwest National Laboratory in Richland, USA, at the University of Brussels, Belgium, and at the University of Frankfurt, Germany, she specialized in several aspects of NMR spectroscopy including the structure elucidation of proteins and their interactions with drug-like compounds.
Over the past seven years, her research interest has been concentrated on technological advancements and biological perspectives of nutritional metabolomics. In particular, the microbial-host metabolic cross-talk in relation to foods has become her main focus. She leads a project on 'gut & immune health' within the Netherlands Metabolomics Center, pursues studies in the EU-Transfer of Knowledge project 'Gutsystem' and is recently involved in activities of the European Nutrigenomics Organisation.
