Food Chemistry
The group has access to a wide range of automated analytical equipment such as HPLC and GC, both with multiple detection formats, and also to instrumentation such as a LECO CNS analyser for more standard nutrient analysis. Measurements are made on many specialty phytochemicals, in particular those with identified biological activity, as well as a range of common macronutrients such as sugars, organic acids, fatty acids, carotenoids, polyphenolics and other flavonoids. There is also access to mass spectral capability (LC-MS, GC-MS) and NMR for identification of new and/or unknown compounds of interest.
The group has a special interest in the application of analytical systems in the understanding of bioactive components and their behaviour.
