Present research/professional speciality:

Thirty-two years experience as a scientist, which includes work on carbohydrate synthetic chemistry, structure and function of polysaccharides, glycolipids, fat uptake by foods, postharvest changes in texture and other attributes of fruit and vegetables, changes in cereals and fruit on processing, and the chemical and physical nature of the plant cell wall. Current research includes lipids, antioxidants, interactions of food macromolecules, synthesis of novel food glycoproteins, and nutrigenomics.
